NEW CHAMPAGNE MAKING METHOD
WORLD´S FIRST "TROIS CIRSTAUX"

IT ALL STARTED WITH A REDISCOVERY
Granite stone is millions of years old and consists of 3 crystals: feldspar, quartz and mica.
These three crystals will revolutionize the champagne history. Granite has been used to store food for thousands of years.
-
Wine was first mentioned 8000 years ago, and it is known that the old portuguese used granite for wine production. But then all forgot several hundred years on granite.
-
Champagne was invented in 16th century (Dom Perignon)
-
In 2014 granite, consisting of three crystals, was rediscovered for wine production.
AND IT BECOMES A WORLD NOVELTY REVOLUTIONARY
Current Champagne production:
The wine for Champagne is usually stored in steel tanks (more than 90% of the Champagne production) or wooden barrels.
Good wine needs an ideal amount of oxygen in the maturing process - and it should "breath slowly" In steel, wine cannot breathe. Sometimes the base wine is oxygenated with technical devices to improve the quality. In the oak barrel, the wine can breathe well but receives secondary aromas. Some people like it, some not so much.
NEW IS NOW: THE GRANIT BARREL, THE CRISTALLINE METHOD
for the production of Champagne.

Because of the structure of the 3 granite crystals the wine can "breathe well" and receives the ideal amount of oxygen after 4 - 6 months of storage.
WHY WE ARE SURE THAT THE CHAMPAGNE WILL TASTE PURE - FRUITY - CRISTALLINE FRESH?

This security comes from the experience of our partner-winemakers since 2014, our top 4 and 5 star customers and the many professional ratings of the wine from the ganite barrel.
Everybody praise the fruitiness, purity and special minerality.
After intensive discussion and tastings of wines from granite barrel together with the experienced chef de cave from Épernay, the procedure for refining the base wine with the champagne method is clearly defined.
It is already certain that the champagne will be unique, just as the wine from the granite barrel will retain its pure, natural fruitiness - because granite is tasteless and gives the wine the right amount of oxygen.
The minerality becomes crystalline freshness through bottle fermentation and and dosage.
René Gabriel said:
The natural stone wine Chardonnay is extremely fragrant and full of energy.
And most importantly, do not get tired of wood.

FROM WHICH REGION DO THE GRAPES COME AND WHICH GRAPES ARE USED?
Our Vigneron owns vineyards in champagne, in the area around Epernay also grand cru vineyards.
The sorts: pinots noirs, chardonnays.
The secret of which grapes are used will announced on July 1st. 2023.
WHY IS THE CHAMPAGNE MAKER NOT ANNOUNCED NOW?
After researching which winegrowers would like to work with the new method, it turned out that only a few winegrowers are willing to give us some of their treasures. And this only under certain conditions. That is why we have agreed to remain silent until 1 July 2023 in order to achieve the desired surprise effect with ZÉRO MILLÉSIME.
WHAT HAS ALREADY BEEN DONE?
The barrel (made from a granite block, the wall is 10cm thick, weighs 1.9 tons and holds 1.150 liters) are already produced and paid.
WHAT TO DO NOW?
Good vintage champagne takes time, our champagne production process takes 3 years - a longer aging period is offered and recommended.
There are 2 main topics to do in these 3 years:
1) The work of the chef de cave - to make best champagne.
The Winery of our champagne maker existed since approx. 1833 and the chef de cave is today the head of the family. The entire team works in the cultures with the reduction method - with the aim of increasing the quality of the grapes and protecting the biodiversity of the plots. Simple habits have been introduced, but essential for the conservation of natural areas: maintenance of forests, natural hedges, maintenance of ecological buffer strips.
The winegrower is VDC certified (Sustainable Viticulture in Champagne) and worked also with zero sugar dosage. More about the production process please klick here:
The ideal partner for GRANITUM and a uniquely champagne will be created - FOR SURE
"Of course we are proud to have such famous houses in our street"

QUESTION: A new champagne brand without tradition and family coat of arms?
Of course not. Our vigneron has a long tradition and its traditional coat of arms will of course be prominently represented on the bottle. Our bottle will be decorated with two (back&front) main labels :-).
2) Marketing to develop a strong brand with a high value.
I, Robert, have long experience in brand building. With some experts I will develop the project into a valuable brand over the next 3 years.
Austria's best sommelier had already shown interest in the granite products at wine. This one is also AMBASSADEUR DU CHAMPAGNE.
Just as it is certain that our chef de cave will produce the finest CHAMPAGNE GRANITUM so is it certain that our team will create a VALUABLE BRAND.
