Current Champagne production:
The wine for Champagne is usually stored in steel tanks (more than 90% of the Champagne production) or wooden barrels and some use concret.
Good wine needs an ideal amount of oxygen in the maturing process - and it should "breath slowly" In steel, wine cannot breathe. Sometimes the base wine is oxygenated with technical devices to improve the quality. In the oak barrel, the wine can breathe well but receives secondary aromas. Some people like it, some not so much.

The minerality will becomes crystalline freshness through bottle fermentation and zero dosage.

Our Vigneron owns vineyards in champagne, in the area around Epernay.
The sorts: pinots noirs, chardonnays.
The secret of which grapes are used will announced on March 1st. 2024.
WHY IS THE CHAMPAGNE MAKER NOT ANNOUNCED NOW?
After researching which winegrowers would like to work with the new method, it turned out that only a few winegrowers are willing to give us some of their treasures.
